Purely Simple Energy Squares

  • 2cups whole oats
  • 2cups slivered almonds
  • ½cup shredded unsweetened coconut
  • 1/2cup good quality maple syrup
  • 1tsp vanilla
  • 2pinches sea salt
  • ¼cup slivered almonds
  • 1tsp sea saltoptional
  1. Combine all ingredients in Vitamix or food processor until well combined and smooth.
  2. Line square 9 x 9 baking dish with parchment.
  3. Pour mixture onto baking dish and press down evenly with spatula so that it is completely spread out. It should be about 1/2 inch thick.
  4. Refrigerate overnight. Remove from parchment and slice into 1 x 1 inch squares.
  5. Store in a container in the refrigerator for up to 1 week.
Recipe Notes

They can also be stored at room temperature, but they are best eaten cold and will last longer.
