COCOA ALMOND PROTEIN BALLS

I discovered the ultimate snack when you hit that time of the day when you need a quick fix that will actually fill you up. Like when you need a snack, but have zero time and need something instantly! I’m all for eating mindfully, which means mindfully choosing, preparing and siting down to eat. However, as a mom sometimes you do need a little pop in your mouth burst of energy.

I have made other energy balls before, but because the base is almond flour, these are super high in protein which really helps to fill you up. Normally I would prefer something with some sort of grain in it like oats. But I came up with this because I was having friends over for coffee on the weekend and I needed something to serve with it that was Passover friendly. I didn’t have time to bake, so thought this would be super easy and quick.

They’re not too sweet, the only sweetness in here comes from dates actually. I was worried they would be too bitter, but they were perfect. In my opinion, they are definitely not a dessert, just a great snack. If you want to try something similar, but more dessert-like, try my date truffle balls which are on my instagram feed!

  • 2 cups almond flour
  • 4 Tbsp shredded unsweetened coconut plus extra for rolling balls in
  • 14 dates pitted
  • 2 tsp cacao powder
  • 2 Tbsp liquid coconut oil
  • 2 tsp pure vanilla

Instructions
  1. Combine all ingredients in food processor or Vitamix and process until smooth. Roll all or half of the balls in coconut. Store in refrigerator.
Recipe Notes

if you make your own almond milk, you can use the leftover almond meal instead of almond flour. It just needs to be dried and baked prior. Best eaten cold!
